Willie buys his beans direct from the farmers *, then makes them into chocolate in small batches in his factory in England, using neither vanilla nor soya lecithin, so preserving the highly individual flavours of the beans. One batch may take up to 21 days compared to industrial chocolate which is made in a few hours. Good things in life are worth waiting for. Willie’s dream of making the world’s best chocolate was born on Hacienda El Tesoro, his cacao farm high in the Cloud Forest in Venezuela, and was dramatized in his television shows and cook books.
